Big thanks go out to Kelly Martino for sharing this yummy pumpkin cookie recipe with us. We are told that it’s a good idea to double the recipe because they are absolutely delicious (although not figure friendly)!
- 1 cup shortening
- 1 cup sugar
- 1 cup pumpkin
Cream all three above together in a mixer then add:
- 1 egg
- 2 cups flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1 tsp salt
Place a good size spoonfuls on a baking sheet and cook 10-12 min at 375 degrees.
- 3 tbsp butter
- 4 tsp milk
- ½ cup brown sugar
Cook in saucepan over low heat, once all ingredients are melted, let cool then add:
- ¾ tsp vanilla
- 1 cup confectioners’ sugar (add as much as needed to stiffen)
Drizzle the frosting on the cooled cookies.
